Our poached eggs are very popular as a topping. All of our stores use an average of over 1,000 eggs per day. In northern Europe where labor costs are very high, eggs are prepared very frequently and it is important to minimize preparation time. When peeling eggs by hand, our fastest person took an average of 90 minutes to peel 240 eggs. We decided to give the egg peeler a try. We started using it just two weeks ago. But we can now peel 240 eggs in 45 minutes.
Shortening the time to prepare eggs has long been a headache for us, and this machine is astounding. Making many eggs in one job batch affects our costs, given the initial preparation and cleanup. We also realized that we needed to improve our cooking techniques for better performance. We want to explore and continue to use machines to reduce labor time.
